Our History
The passion for dry-aged meat, in Paris 17
Somewhat forgotten classics
At Gaston's, they simply serve one of the best rib steaks in Paris.
In the kitchen of this small bistro in the 17th arrondissement, Maxime Aliano, former sous-chef of the starred chef Hélène Darroze, creates a 100% homemade cuisine where somewhat forgotten classics regain all their nobility: matured Simmental rib of beef, melting pot-au-feu, hand-cut tartare, roasted bone marrow.
In this dry-aged meat restaurant in Batignolles, the atmosphere is intended to be warm, friendly and unpretentious — a haven where lovers of fine cuts of meat can go with their eyes closed, with friends or family.
Meat at the heart of the experience
At Gaston's, whether it's Argentinian ribeye or matured Simmental beef rib, each piece of meat is carefully selected for its quality and origin.
Furthermore, the cooking of our products is always perfectly controlled, in order to reveal their full tenderness and richness of flavor. Thus, each bite becomes a true delight, whether accompanied by a smooth homemade mashed potato or a generous béarnaise sauce.
Ultimately, with Gaston, meat is not just a dish: it is a true celebration of taste and tradition.
